The Basque Cider House Tradition
The sagardotegi (cider house) tradition dates back over 500 years to the rural farmsteads of Gipuzkoa. Originally, cider was produced by local farmers as an everyday drink, and these rustic establishments became communal gathering places. Today, from January to April, they open their doors for one of the most beloved gastronomic rituals in the Basque Country.
The Txotx Ritual
When the cider maker shouts "Txotx!", everyone lines up with their glass to catch the thin golden stream of natural cider as it arcs from the massive chestnut barrel. You drink it fresh, standing, in good company. This communal ritual is the heart of the experience.
The Sacred Menu
The set menu is unchanging: cod omelette (tortilla de bacalao), cod with peppers (bacalao con pimientos), a massive T-bone steak (txuleta) grilled over charcoal — ordered rare, as tradition demands — and Idiazabal cheese with quince paste and walnuts. All accompanied by unlimited natural cider.

The sagardotegi is not just a restaurant — it is a celebration of Basque identity and one of the most authentic gastronomic experiences you can have in the region. A place where food, drink, and community come together as they have for centuries.
